Christmas Breakfast... Quiche



Every single year the boys ask for quiche for Christmas morning breakfast. I don't even have to ask anymore! They really love those little pre-made kind from the freezer section, and normally I oblige because, well, it is easier and I am tired LOL! This year, I was feeling extra and made our quiche from scratch, and I am SO glad that I did. It was definitely too beautiful not to take a picture of and the picture made people drool... So, let me share the details with you!!


What you will need: This makes TWO quiche

- 2 Pie Dishes

- 2 cookie sheets

- Parchment Paper

- Cutting Board

- Knife

- Pillsbury Pre-Made Pie Crust (2 pack)

- 10 Eggs

- 1-1/2 Cups Milk (we used Lactaid)

- 1lb Bacon

- 1 Cup Shredded Swiss and 1 Cup Shredded Sharp Cheddar (MIX TOGETHER IN A BOWL)

- 1/2 Cup Shredded Swiss and 1/2 Cup Shredded Sharp Cheddar (MIX TOGETHER IN A DIFFERENT BOWL, this is used for sprinkling on top of the quiche later in the recipe)

- One cup on chopped organic spinach

- Salt and Pepper


That really is all I used!


Now, let's talk about the how:


Step 1: Cook your bacon!! I learned to bake mine and NEVER went back. Seriously, life changing! DO NOT pre-heat your oven. Place parchment paper on a baking sheet (I have to use two because typically 1lb of bacon requires more than the space one cookie sheet allows). So, separate your bacon onto cookie sheets without overlapping and when ready place them in a cold oven. Turn oven on to 400* and bake for roughly 15-17 minutes (it needs to be crispy)!


When your bacon is cooked to crispy perfection take it out of the oven and place bacon pieces on a few paper towels to drain while preparing the other ingredients.


REDUCE HEAT OF OVEN TO 375* and leave on for quiche!


Step 2: Place both pie crusts in the pie pans and set aside.


Step 3: Beat 5 eggs in a bowl.


Step 4: Add 3/4 cup of milk and whisk together.


Step 5: Mix in 1 cup of your cheese mixture.


Step 6: Add one pinch of pepper and one pinch of salt, whisk everything together and set aside.


Step 7: Place bacon on cutting board and chop into little pieces. Set aside.


Step 8: Add a handful of the chopped bacon to your egg mixture and stir. (LEAVE SOME BACON BEHIND IN ORDER TO HAVE SOME FOR SPRINKLING ON TOP OF EACH QUICHE LATER IN THE RECIPE).


Step 9: Mix in 1/2 Cup chopped spinach


Step 10: Pour egg mixture into first pie crust and set aside.


Repeat steps 3-9 (minus the chopping bacon step because you already did that)!!


Place quiche in your 375* oven for 20 minutes. Remove both quiche from oven and sprinkle each with remaining cheese and bacon. Place back in the oven for 15-20 minutes. Watch closely because ovens do vary!! You will know when they are done when the edges of the crust are golden brown and the egg mixture is bouncy and firm (not runny).


Let cool for 5 minutes, slice, and enjoy!
